Raw Wild Rice Salad
1 pound wild rice (whole)
1/2 cup celery, finely chopped
1/8 cup parsley, finely chopped
1/8 cup chives, finely chopped
1 cup pecans, chopped
1/2 cup red pepper, minced
1/2 cup yellow or orange peppers, minced
Sauce Ingredients
3 cloves garlic, whole
1/4 teaspoon cayenne pepper
1/4 teaspoon nutmeg
1/4 cup honey or concentrated apple juice
1/4 cup olive oil
1/8 cup rice vinegar
1/2 cup fresh lemon juice
1/4 cup Braggs Liquid Aminos
1/2 cup raisins
1/4 cup pecans
Soak wild rice overnight in water. Sprout for 1-3 days after soaking. Wild rice should appear open and have “grey” area showing. In a large bowl, chop celergy, parsley, chives and pecans. Add minced tri-colored peppers. Add rice at room temperature.
To prepare the sauce: Place all contents of the sauce (except pecans and raisins) in a blender. Blend until smooth. Add pecans and raisins last and blend. Pour sauce over the rest of the ingredients. Marinate at room temperature for at least an hour. Serve at room temperature.
Ari’s Ceasar Dressing
1 1/2 cups olive oil
1/2 cup brown rice vinegar
6 cloves garlic
1 cup Braggs Liquid Aminos
1/4 cup lime juice
1/2 teaspoon cayenne pepper
1 1/2 cups cashew nuts (put in last)
Combine all ingredients (except cashews) in a blender and blend until smooth. Add cashews slowly and blend until creamy. Serve over crisp romaine lettuce. If you are interested in a cooking intensive,
Banana Ice Cream is often served as an evening treat here, with raw brownies and/or fresh fruit. It is a dessert that has the texture of soft serve ice cream and can be made to taste a number of different ways when combined with other frozen fruit.
To make it:
* Peel and freeze ripe bananas—a small piece of waxed paper between each one helps to separate them later.
* Press through a Champion juicer with a blank blade. That’s it!
Frozen strawberries, blueberries, mangos, peaches, etc., can be mixed with the banana as it is being processed through the juicer. Fruit sauce or carob sauce, granola, chopped nuts and/or coconut can also be sprinkled on top for a treat that’s easy, healthy and good enough to satisfy any sweet tooth. Kids love it! You will too!
Juices:
Apple
8 large apples,
optional 1/2″ fresh ginger root, chop and buzz in blender with 1 C of the apple juice then add to rest of apple juice.
Can add any of the following:
small beet and 1/8 C fennel coarsely chopped
or 2-3 celery stalks
or 1-2 celery stalks and 1/4 medium beet
or use 5 apples and 5 pears
Bladder Healer Juice
8 carrots, 1 small beet and 1 cucumber
Carrot V-8
8 carrots, 3 celery stalks, 1 green pepper, 1 cucumber, 1/4 onion, 1 beet, 2 garlic cloves, handful of spinach
Orange-Grapefruit Flush
6 oranges, 1 grapefruit, 13 lemons, 1 T olive oil, 1 ginger 2″ piece, 2 medium garlic cloves
Juice oranges, grapefruit and lemons separately then mix together. blend 4-5 seconds, let it settle, blend again 4-5 seconds, continue until emulsified. Do not over blend as it will heat up and kill the enzymes. Serve with cayenne pepper.
