He and Tania, who has been in charge of food services, worked long hours to create meals that were nutritious and delicious. Ari Budnick is a chef extraordinaire that hails from Chicago, Illinois, and plans to spend time with us again next summer. We don’t know what he has in mind for us then, but we can’t wait to find out. We would like to thank him for sharing his expertise and knowledge with us in the newsletter, not to mention two of his favorite recipes.
WHY RAW? By Chef Ari
Raw food enriches the body with live enzymes, vitamins and minerals. The abundance of enzymes in these “live” foods aids disgestion and frees the body to use its energy more efficiently. Energy that otherwise would be needed for the simple process of digestion is free to raise the body’s vitality and level of health. Eating a raw food diet allows more energy for “healing.” It promotes emotional, physical, and spiritual well-being. In short, raw food makes you feel more alive! Over the past 12 years of being a chef, I have prepared all types of food. One of my favorite and most stimulating to prepare has been raw foods. Ancient techniques of food preparation are part of the process. For thousands of years we have prepared great food without cooking by using acids such as lime and lemon juice, natural fermentation and marination. This type of preparation keeps food and grains whole and pure. A healthy body just naturally follows.
